About the Recipe
For a simple, delicious way to prepare perfectly seasoned, juicy chicken breasts, use an instant-read meat thermometer to ensure safe, accurate cooking. This is a healthier alternative to store-bought roasted chickens, which often contain unwanted additives. Serve on its own as a main course or keep on hand for easy weekday meals.

Preparation
Preheat oven to 350 degrees.
 Pat chicken breasts dry with paper towel and drizzle olive oil on all sides, season generously with Pastagirl Seasoning
 Heat a grill pan to medium high heat. Using tongs, place chicken presentation side down in pan then immediately lift it up and set it back down in the pan. This will help the chicken breast release from the pan easily.  Cook, undisturbed for about 2 minutes. Turn chicken breast over and grill for one to two additional minutes.
 Remove from grill pan and place the seared chicken on a baking sheet and into the preheated oven. Continue cooking until an instant-read thermometer reaches 158-160 degrees internal.
 Remove the chicken breast from the heat, loosely cover with foil and let rest for 5 minutes. It is very important to let the cooked chicken rest before slicing or serving to allow the internal juices to redistribute. While resting, the temperature will continue to rise to 165 degrees, which is FDA approved safe.
