My mother was a cookie queen! This cookie is one of the many traditional cookies she would make during the Christmas holiday. They’re know by many names- Thimble, Jam Thumbprint, Swedish Dainties, or Swedish Tea Rings. These are perfect for any tea party, wedding or baby, shower or just to enjoy with a cup of coffee or tea. Be aware you can’t eat just one!

Yields 15-20

 

  • ½ cup butter
  • ¼ cup brown sugar
  • 1 egg, (separated)
  • 1 cup flour
  • 1 1/2 cup walnuts (finely ground) and place in a small bowl
  • 1/3 cup of Raspberry or Favorite Jam

 

  1. In a small bow whisk egg white and set aside.
  2. Beat butter and sugar and add egg yolk, cream again and mix in flour.
  3. Roll dough in the size of a marble and roll in egg white, then in ground walnuts. Place cookies 2 inches apart on prepared cookie sheet; press center of cookie with thumb.
  4. Bake at 350 degrees for 5-8 minutes.
  5. Remove from the oven and press center of cookie again and return to oven and bake 5-8 more minutes.
  6. Cool completely on a rack before filling with approx. 1/4 tsp. of desired jam.

 

Store in an airtight container or tin up to two weeks.
