My mother was a cookie queen! This cookie is one of the many traditional cookies she would make during the Christmas holiday. They’re know by many names- Thimble, Jam Thumbprint, Swedish Dainties, or Swedish Tea Rings. These are perfect for any tea party, wedding or baby, shower or just to enjoy with a cup of coffee or tea. Be aware you can’t eat just one!
Yields 15-20
- ½ cup butter
- ¼ cup brown sugar
- 1 egg, (separated)
- 1 cup flour
- 1 1/2 cup walnuts (finely ground) and place in a small bowl
- 1/3 cup of Raspberry or Favorite Jam
- In a small bow whisk egg white and set aside.
- Beat butter and sugar and add egg yolk, cream again and mix in flour.
- Roll dough in the size of a marble and roll in egg white, then in ground walnuts. Place cookies 2 inches apart on prepared cookie sheet; press center of cookie with thumb.
- Bake at 350 degrees for 5-8 minutes.
- Remove from the oven and press center of cookie again and return to oven and bake 5-8 more minutes.
- Cool completely on a rack before filling with approx. 1/4 tsp. of desired jam.
Store in an airtight container or tin up to two weeks.
