These melt in your mouth, nutty, buttery, shortbread biscotti are a traditional cookie known all around the world. In America also known as a Snow Ball Cookies. Mexicans, Russians, and Germans make these must have little delights for weddings, holidays and all year long.

Yields approx. 9 dozen

 

  • 1 Lb. butter (my mamma used Oleo)
  • 1 cup powdered sugar, plus ¾ cup for rolling after baked
  • 2 Tbsp. vanilla
  • 4 ½ cups flour
  • 1 cup walnuts, ground small

 

  1. Place ¾ powdered sugar in a small to medium size bowl, set aside
  2. Cream butter, powdered sugar together in a mixing bowl.
  3. Add vanilla and mix in flour a little at time.
  4. Add nuts and form into a 1-1/2” walnut size ball.
  5. Place on prepared cookie sheet
  6. Bake 30-40 minutes @ 350 degrees, check frequently.
  7. Immediately after removing from oven roll the cookies in a bowl of shifted powdered sugar.
