My girlfriend Jodi shared this fun recipe with me years ago. I modified the sugar amount and have made tons of these over the years. My family and friends refer to them as Agape Cookies. They are full of oatmeal and a secret crunch ingredient that makes them so fun and very special.

 

Agape Cookies

About 4 dozen

 

  • 1 cup butter soften  
  • ¾ cup brown sugar
  • ½ c. sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 ¾ cups flour (I use white and wheat combination)
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 cups oatmeal
  • 2 cups cornflakes
  • 1 cup chocolate chips
  • ½ cup chopped roasted walnuts

 

  1. Cream butter and add sugars.  Add eggs and vanilla. Beat well.
  2. Add flour, baking powder and baking soda and salt. Stir in oatmeal and cornflakes. Mix well. Add 1 cup chocolate chips.
  3. Bake at 350 degrees for 8-10 minutes or until golden brown. I bake the cookies closer to the 8 minutes when they are still soft in the middle and brown around the edges.

 

Store cookies in an airtight container
